  • 1) Cuts, scrapes and pulls meat from cooked poultry carcasses, using fingers and boning knife: Pulls wings and drumsticks from carcasses.

  • 2) Cuts along each side of breast plate, using knife, and peels meat from breast, using hands.

  • 3) Pulls and scrapes meat from rest of carcass, using knife and hands.

  • 4) Segregates light and dark meat into separate piles.

  • 5) Discards wastes, such as skin, bones, and gristle, into waste containers.
