Job Description:

• 1) Supervises and coordinates activities of workers engaged in processing skins, splits, and trimmings to produce gelatin: Directs workers engaged in chopping, washing, liming, and cooking of stock, according to procedures specified for type of raw material in process.

• 2) Estimates weight of stock in vats and specified amount of lime to be used in cooking.

• 3) Performs other duties as described under SUPERVISOR Master Title.
