Job Description:

• 1) Performs any combination of following duties to process stock for use in making glue or gelatin: Moves stock to kettle upon signal from COOK, using handtruck, and dumps stock into kettle.

• 2) Turns valve to fill kettle with water to submerge stock.

• 3) Skims grease from surface of water in kettle, using skimmer.

• 4) Cleans kettle, using shovel, brushes, and water.

• 5) Packs bottom of kettle with excelsior used to filter broth drained from kettle.
