Job Description:

• 1) Sorts fish livers, according to species of fish and size, shape, color, and texture of liver: Cuts liver from viscera, using knife, and places liver in specified tub.

• 2) Discards diseased, spoiled, and poor quality livers.

• 3) May clean and fillet fish.
