Job Description:
- 1) Tends machine that clarifies wine prior to filtering: Starts pump to transfer fermented wine from settling cask to clarifying tank.
- 2) Spreads chemicals over surface of wine to aid in clarification, and starts agitator to mix ingredients for specified period of time.
- 3) Stops agitator to allow suspended matter to settle.
- 4) Starts pumps to transfer clarified wine to filtering tank.
- 5) May fumigate empty wine casks with bottled gas and burn sulfur sticks in casks to kill bacteria.
